PGI Retsina of Gialtra (ΠΓΕ Ρετσίνα Γιάλτρων)
The demarcated area for the production of PGI Retsina of Gialtra (ΠΓΕ Ρετσίνα Γιάλτρων) wines comprises the area of Edipsos in North Evia.
The characteristics
The area is characterized by a Mediterranean climate, influenced by the beneficial moderating effect of the sea-breezes blowing inland from the Northern Euboean gulf.

The production- varieties
The white grape Savatiano (or white Kontoura as it is called locally) and the pink skinned Roditis are allowed in the production of both white and rosé PGI Retsina of Gialtra (ΠΓΕ Ρετσίνα Γιάλτρων).
Retsina is made by adding a special type of resin (of the Pinus Halepensis tree) before or during the fermentation of the must. The total quantity cannot exceed 1kg per 100 liters of must. The resin will be removed, adding only aromas and flavors in the resulting wines.
